Megan Lavin, Allergy Awesomeness
I grew up not caring to learn any of the awesome dishes my mom cranked out. My world was then turned upside down when my son was diagnosed with a rare disease called eosinophilic esophagitis in 2013. Because of this not-so-awesome disease, my son has 30+ food allergies I have to work around. I had to take everything I had learned about cooking and start from scratch. After hours upon countless hours of trial and error in my kitchen I’ve stumbled across some awesome recipes that are allergy-friendly.
As I’ve learned in my short life, a lot of things I thought “weren’t for me” ended up being exactly what I needed. While I still don’t love this disease, it’s obviously been placed in my path for a reason. I’m happy to share what I’ve learned along the way and hope that these recipes can help others out there.
You can give up ingredients, but you don’t have to give up awesomeness.
